Winter Camping Recipes

What’s a good dinner for winter camping?
I’m going winter camping, and I don’t know what to bring for dinner. If you have any Recipes, it would be greatly appreciated. I know there’s like MREs that you put in a ziploc bag, but if you have a favorite or a good website, please share.
What I like to do is prepare one or two meals at home, like a hearty venison or beef stew and/or Chili, and store them in small vacuum-pack bags. When I get to camp I just start a pot of water to boil and put the bag inside while I go about setting-up the rest of my camp. About an hour later I have a steaming hot stew or chili, along with some rolls or bread I also bring along.
Another easy meal is Italian Sausage. Chop up some potatoes into small, thin pieces, add chopped onions, chopped sweet and hot peppers and a little garlic. Wrap in a foil pouch and cook over hot coals for an hour (again, a good opportunity to set-up the rest of your camp). Add a little mustard or spaghetti sauce if you prefer. Good by itself or with Italian bread, or even flour tortillas, and you can substitute hot dogs for sausage if you prefer. This can also be cooked in advance, stored in a vacuum bag and reheated in camp if you like.
You can buy or make pre-cooked chicken cubes or strips and add to a packet of Uncle Ben’s Ready Rice garden vegetable or roasted chicken varieties. Add some chili, onion and garlic powder and a little cumin, salt and pepper and serve with soft tortillas to make fahitas.
If you like seafood another easy meal seafood medley. Shrimp, scallops, clams, lobster tail (optional), with a little butter in a foil packet cooked over coals. Heat up a pre-cooked Uncle Ben’s Ready Rice packet of white rice or another variety.
It’s always a good idea to bring along some peanut butter and crackers (unless you’re allergic to peanuts). Lots of quick calories, carbs and fat to keep your body going short term.
There are also MRE rations and freeze-dried backpacker’s meals from Mountain House, Backpacker’s Pantry and other companies. Some of them actually taste good, but nothing as good as what you make yourself.
